Often interchangeable with flapjack or hotcake, pancakes as we know them today are made of thin batter cake fried in a pan in oil or butter. Although they might not have had the same name, pancakes have been recorded as being made as early as the fifteenth century, although as a surname Pancake has been found as early as late 13th century. In Sweden, pancakes are traditional Thursday winter's night dessert, following pea soup. This combination has been enjoyed since the Middle Ages.
